Expecting guests this weekend and want to impress them? This recipe is surprisingly easy to make. No baking, no corn starch or gelatin required and it comes together in no more than 15 minutes. The fridge does the rest of the work.Warning: this recipe is too easy to make it that you will be tempted to make it and consume more often than you probably should!

Ingredients
- 100 g dark chocolate (70%), chunks or chopped
- 1 tbsp unsalted butter
- 3 large egg yolks
- 1/2 cup icing sugar
- 1 tbsp cocoa powder
- 237 ml whipping cream
- 1 1/2 cup whole milk
-
1 tbsp Javy Coffee Concentrate
- 1 tsp vanilla extract
- pinch Maldon sea salt
- 12 ameretti cookies
Directions
Crush ameretti and add a splash of Javy coffee and melted butter and combine evenly. Add one tablespoon of this mixture to the bottom of your dessert cups and set aside.
Start doing the base by gently whisking cream, milk, yolks, sugar, cocoa and salt until thickened on medium heat. Stir frequently for about 10 to 12 minutes, until you can run a finger across the back of the spoon and it holds.
While the base is still hot, place chocolate and butter in a bowl. Using a fine mesh sieve, strain the base into the bowl of chocolate. This ensures your pudding is smooth and velvety. Stir to combine. Add coffee concentrate and vanilla extract. Stir until smooth.
Pour into your dessert cups and cover and chill until set, about 3 hours. Add your desired finishing touches and enjoy!
